Perhaps you already know about Thyroid Refresh. But if you haven’t come across them yet, this website is dedicated to supporting, educating and building a community for the many people out there who have challenges with their thyroid health. Ginny and Danna have created an invaluable platform, bringing in experts such as Mary Shomon, NY Times best selling author of 13 books on health, and renowned thyroid advocate. Dr Ben Lynch brings his expertise on methylation and genetics, and there are so many more first class resources available to help you overcome symptoms and heal from thyroid disease. I’m flattered to have been asked to contribute some recipes – this Salmon, Sweet Potato and Watercress Salad, with Turmeric Cream being one of them.
If you’re missing potato salad on the Autoimmune Protocol, you’ll love this version. Even more so for the extra goodness that’s packed inside. Wild salmon, well known for its high Omega-3 content and ability to anti-inflame. Peppery watercress, not only because it tastes so good but it’s a highly effective digestive aid. Sweet potatoes obviously replace the more traditional white and help to add bulk to keep you satisfied. And last but not least, capers, shallots and apple cider vinegar add a whole lot of tang. All in all, it’s a wonderful salad that will keep you happy throughout the summer and beyond!
If you’re ready for the recipe, head on over to the Thyroid Refresh site and be sure to have a good snoop around whilst you’re there.
