Blueberry Kale Collagen Shake {AIP, GAPS, SCD, Paleo}

Blueberry Kale Collagen Shake [AIP]

Once again a busy week so the blog has had to take a bit of a back seat I’m afraid. My boy went off to camp with all the goodies I’d spent hours making, only for me to find some of it still in his bag on his return, including some marshmallows and the cake (whaaaaaat?), which we all devoured within minutes of him walking through the door! No matter, he had a great time despite the fact his legs were raw from a bad case of snow boot rub. And did he use the plasters I sent along with him? *shakes head*

Now we have three weeks worth of Spring Break because the childrens’ school holidays only overlap by one. I would groan but actually it’ll be nice to have a week of individual quality time with them. And besides, they can help me with the cooking 🙂

My daughter and I play a game when it comes to making shakes. We each take it in turn to choose an ingredient, she’ll go first, then me and so on until we decide there’s probably enough in the blender and off we go. No prizes for guessing who chose what!

Blueberry Kale Collagen Shake {AIP}

blueberry kale collagen shake
You could happily use fresh blueberries and a frozen banana if you prefer, but you may need to adjust the liquid content slightly)
(serves 4)

2/3 cup frozen blueberries
2 leaves of green kale
1 large banana
juice of 1/2 lemon (2 tbsp)
1 cup coconut milk
1 cup filtered water
1/4 tsp ground ginger
2 tbsp collagen hydrolysate
pinch salt
6 ice cubes

Put all ingredients into a high speed blender and whizz until completely smooth, adding a dribble or two of filtered water if you find it too thick. Serve immediately.
