Raspberry Valentine Cake - Healing Family Eats

Raspberry Valentine Cake {AIP}

Are you feeling a little bit romantic but you're following the AIP and think you're never going to eat cake again? Well stop it because I've had those thoughts and wrote a recipe for us all. And when I decorated it, it was so much fun!

Raspberry Valentine Cake is my second recipe for Mickey and Angie as my new "job" as Guest Contributor over at Autoimmune-Paleo. You are gonna love this cake, it's simple to make and delicious to eat ... what more could you want for Valentine's Day. Whether you celebrate Valentine's Day or not, any day that involves cake is surely a day to celebrate.

    Wow that is stunning! Keeping this in mind for my little valentine's party as we need something gluten free and dairy free. This would be perfect. Got to find the palm shortening..... thank you!!!!!!

    This looks amazing, i hope to try it soon. What does it taste like? The bread resembles carrot cake but i know it isn't carrot. I'm just curious to know

      Goodness it's been so long since I had it. The cake itself tastes of honeyed apples and when the frosting is on it, it is sweetened honeyed apples - very delicious but just for treats. No carrots involved, I promise 😉

    Looking forward to trying this cake! I’ve read through the instructions and I’m needing some clarification on storage. If I want to make the cake the day before serving it, do I wrap the cakes individually in plastic wrap and keep in the refrigerator? Or if in the freezer, about how long would you recommend to take it out before serving so it’s not too hard? Thank you!

    I recommend freezing in the plastic wrap and frosting as it's thawing. When you do it that way you won't have any cake crumbs in the frosting. Eat it once it's thawed completely - it doesn't take long.
