I'm flattered to have been asked to contribute some recipes - this Salmon, Sweet Potato and Watercress Salad, with Turmeric Cream being one of them.
If you're missing potato salad on the Autoimmune Protocol, you'll love this version. Even more so for the extra goodness that's packed inside. Wild salmon, well known for its high Omega-3 content and ability to anti-inflame. Peppery watercress, not only because it tastes so good but it's a highly effective digestive aid. Sweet potatoes obviously replace the more traditional white and help to add bulk to keep you satisfied. And last but not least, capers, shallots and apple cider vinegar add a whole lot of tang. All in all, it's a wonderful salad that will keep you happy throughout the summer and beyond!
