Thyme Scented Strawberry Fool [AIP]

Happy April everyone. April Fool's Day as it happens and yes, have I got a fool for you!

The good people of California are letting us share their bounty of strawberries now and, although it's still not the true season for strawbs and cream, I have started already folks.

A 'Fool', in the culinary sense you understand, is a classic olde English dessert made by folding stewed fruit into sweetened whipped cream. The name stems from the French 'fouler' meaning to crush, and I have to tell you we are having one major crush on this recipe right now.     so so gorgeous! i will definitely be making these this spring. i like that mentioned natural value coconut milk, that's what i use too. happy easter!

    I cannot have coconut what AIP friendly substitute do you recommend.

      I'm afraid there isn't an AIP-friendly substitute for this recipe because it uses whipped coconut cream. Sorry.
