My spiraliser broke a month or two ago, despite my only having had the pleasure for little over a year and, even then, using it on a somewhat part-time basis. But absence makes the heart grow fonder I guess, so ever since upgrading I've been spiralising pretty much anything and everything I can lay my hands on.

If you've been frequenting my space here for a while you will know how fond I am of wild salmon, so you won't be surprised to know I've been chowing down throughout the summer. To be fair I eat it all year round, and in good healthy amounts seeing as I want all those inflammation busting Omega 3s. But it's also a super quick meal ... which is super fine by me! This winning recipe contains some of my favourite ingredients - long spaghetti-like noodles, large handful of herbs and, of course, the sockeye - which I prettied up with a scattering of pansies (the rest of which are still outside the kitchen door waiting to be planted. Can't win 'em all!).

What else have I got to tell you?

  • The brain fog I came back with from my summer holiday has finally lifted - boy, it took a long one but coming off the sweet stuff, getting liver paté back into the diet and chugging down bone broth did the trick
  • My latest book recommendation is Why Stomach Acid is Good for You. Wow, this is an eye-opening account of what is essentially the root cause of diseases and how for years doctors have advised suppressing stomach acid in a bid to stop heartburn, ulcers and gastroesophageal reflux disease (GERD) etc, when really these problems are caused by too little stomach acid. A fascinating read
  • The Best AIP Recipes 2015 is being put to bed at the end of this month, that's next week. Boo hoo, nothing lasts forever so if you're interested, grab it now!

And finally, have you seen the latest addition to the side bar? Oh yay, if you have an Instant Pot, you are going to be in heaven and, if you don't have one you may want to get that sorted tout de suite because there's about to be a new e-book on the AIP block.     I am so in love with this recipe. I ADORE salmon, but what I am loving even more = THE ANCHOVIES in the dressing!!

    How do you get the noodles to be so dry? I have tried draining, baking, pretty much everything but they still turn out kind of sloppy. TIA

      I actually tend not to cook them these days. If you make up the dressing and toss the noodles, you'll find they will wilt down a little and are delicious. If you want to heat them, I would sauté for just a minute or two, no longer.
