This is the second post courtesy of a very special AIP person indeed. She's my 11 year old daughter, writing with your children in mind. Here's her first.
Imagine a Christmas scene. The fire crackling, tree smelling of pine needles and citrus, and the iPod is playing 'Frosty the Snowman'. Imagine putting your hands around a hot mug, sitting by the twinkling tree and the cats aren't climbing up it (like they did a few years ago 🙂 ).
Imagine a Summer camping scene. Singing songs around the campfire, roasting AIP marshmallows and sleeping under the stars.
This drink tastes really nice, of strawberries and warmth. It makes me feel cosy, like there's a fire inside of me. Boys won't have to worry about it being all pinky and too girly for them because it's brownish in colour, like weak hot cocoa. Most of you, if not all of you will really enjoy this .. and your Mums and Dads will be trying to steal your cup and drink it themselves if you're not careful.
I know loads of times when I've thought 'ooh I feel like I need some ☕️ chocolate' because it's so nice. But I can't have chocolate because it's not AIP and anyway you need milk to make it. So now when I drink this recipe, I don't feel left out.

fireside hot strawberry drink
(serves 2 children)
1 cup coconut milk
1/2 cup filtered water
2 large medjool dates, pitted and roughly chopped
1/3 packed cup freeze dried strawberries
1 tbsp coconut oil
1/4 tsp cinnamon
1/8 tsp ginger
pinch salt
Put the coconut milk and water into a small pan and bring up to the boil. Get a grown up to help you with that part.
Put all the other ingredients into a high speed blender and get your grown up to pour in the hot coconut milk.
Blend till completely smooth. Make sure you leave the feeder cap open so steam can escape, but put an oven glove over the top or else it may explode out of the blender. Pour into two mugs and enjoy. Don't forget to watch out for the grown ups as you drink!

Your daughter's recipe sounds delicious...and one that I *need* to try. 😉 I don't have any freeze dried strawberries; would (thawed) frozen strawberries work as a substitute?

Hi Christi. Freeze dried strawberries are super concentrated and obviously dry so if you use thawed, you will need to use several very ripe strawberries to get the same sort of flavour and then heat it back up again. Maybe add another tbsp oil too for extra creaminess. Definitely worth a try if you can't source the dried ones but it won't be the same as the original I'm afraid.

Hi Kate, I don't have a blender that can handle hot liquids, what would you suggest? A hand blender, or blend ingredients in cold and then heat up?

Hi Astrid. I would blend it all cold and then heat it up. Once it's hot, give it a really good whisk to froth it up and I imagine you you'll be good to go. Excited you're going to give it a try, I hope you enjoy it!
